Simple Crockpot Apple Butter with no added sugar

Apple picking season is in full effect and though these apples came from my local Target, I still managed to create some yummy goodness in my underused crockpot.

I have fond memories of eating apple butter as a kid on toast and last season when I paid over $6 to get a jar that didn’t have any extra ingredients, I decided to figure out how to make it myself.

  • 10 apples
  • 2 cinnamon sticks
  • 5 cloves
  • zest of 1/2 lime
  • juice of 1/2 lime

  1. Rinse apples and chop apples into chunks removing the core and seeds but not the skin.
  2. Place the chopped apples into the crockpot.
  3. Add cinnamon sticks, cloves, and lime zest.
  4. Stir and turn crockpot to the low setting.
  5. In about 8 hours, the apples should have broken down and turned turn.
  6. At this time use a hand blender to break down and additional skins and cook on high for another hour.
  7. Finally, stir in the juice from the lime. Add more cinnamon if you’d like.

Stored in a jar more than likely eaten on toast!

No Fuss, Oil-Free, Seasoned Oven Fries

The potato is one of the most misunderstood foods on the planet. Its demonized and loved equally. It’s nutrient dense, cheap and flexible. Potatoes are a staple in the Plant Candy kitchen and tonight as we try and figure out what to eat, we decided to use the potato and make a fan favorite, fries.

  • 4 potatoes
  • onion powder
  • garlic powder
  • paprika
  • parsley

  1. Preheat oven to 450°. Prep cookie sheet with nonstick foil. Set aside.
  2. Wash and cut potatoes into strips and put them on the cookie sheet.
  3. Add seasoning to the potatoes and toss.
  4. Bake for 30 mins or until fries are lightly brown and crisp.
  5. If desired, toss fries for even browning.
  6. Serve with ketchup or your favorite dipping sauce.

Served with a little ketchup seasoned with curry powder.

Simple Tomato and Basil Open Faced Sandwich

Tomatoes and late night snacking defiantly make the “Things We Love” list. So this recipe brings both loves together. Enjoy!

  • 1 beefsteak tomato sliced
  • 2 pieces of hearty whole grain bread of choice
  • 1 small sliced onion
  • 4 basil leaf cut into ribbons
  • a drizzle of white balsamic vinegar
  • granulated garlic and fresh pepper to finish

  1. Add bread to toaster.
  2. While bread is in toaster, thickly slice tomatoes, slice onions thinnly and basil ribbons. You can create ribbons by rolling the basil and slicing it.
  3. Once toast is done, top it with tomato, sprinkle garlic powder and pepper. Then add onions, then basil and drizzle with vinegar. Repeat
